INGREDIENTS

600g Flour
500g Peeled tomatoes
320ml Lukewarm water
20ml Oil
10g Sugar
10g Salt
1 cube Fresh yeast
4 (500g) Mozzarella
2 Hard-boiled eggs
to taste Oregano
to taste Mayonnaise

Procedimento

STEP 01
Dissolve the yeast in lukewarm water, then add sugar and oil.

STEP 02
Pour the mixture into a bowl containing the flour and knead.

STEP 03
After 10 minutes, add the salt, form a dough ball, and let it rise in an oiled bowl covered with plastic wrap.

STEP 04
After half an hour, perform the first set of folds (as shown in the video). Repeat the folding process two more times, every 20 minutes (so you will do three rounds of folds in total). Then, place the dough back in the bowl and let it rise for 4 hours covered with plastic wrap.

STEP 05
At this point, stretch the dough with your hands in a TVS pizza pan greased with a bit of oil.
STEP 06
Let the dough rise for an hour in the oven turned off with the light on.

STEP 07
Then spread the tomato sauce over the pizza base (I seasoned it with a pinch of salt, some oregano, and oil).

STEP 08
Remove the pizza from the oven and preheat it to 250 degrees Celsius.

STEP 09
Bake the pizza at the bottom of the oven at 250 degrees Celsius for about 15 minutes (check that the base is cooking).

STEP 10
Then add the mozzarella, cut into pieces (drained and dried), and continue baking for another 15 minutes until the mozzarella has melted. Remove the pizza from the oven and garnish it with hard-boiled eggs and mayonnaise.
